An abbey of brewing monks.
The Cistercians made brewing a discipline — and, like every abbey on a road, kept a guesthouse and fed whoever turned up. They farmed what they served.
In 1536 the abbey was suppressed and the brewing stopped. It has been quiet for four hundred and ninety years.
The part the monks couldn't see.
Inside the cone, resin glands. Past them, yeast — not identified until Pasteur, seven centuries after the abbey was founded.
They got it right anyway, by watching closely and writing it down.
Nine hundred years of looking closely.
